The exact origin of the Cantueso is unknown, although it possibly dates back to the Arab alchemists, who were concerned in detail with the extraction of natural aromas. Later, in the mid-19th century, a liqueur was produced by distilling the stalk and flower of the lavender plant in copper stills, and the product obtained was transferred to oak barrels for aging.<\/p>\n
Our Cantueso Serpis is endorsed by the Consejo Regulador de las Bebidas Espirituosas Tradicionales de Alicante, under the denomination Cantueso Alicantino, obtained by distillation and maceration of the flower and stalk of the Cantueso plant in neutral alcohol of agricultural origin, with an alcohol content of 30% by volume, with a minimum sugar content of 100 grams per liter, expressed in invert sugar, and with a dark transparent color.<\/p>\n
The Cantueso or “Thymus moroderi” used for the preparation of Cantueso Serpis comes from the mountains of Alicante, it is a plant that grows in the most arid areas of the thyme groves, in soils loaded with salts, especially calcium sulfate and sodium chloride. It is harvested at the time of maximum flowering, in May and June, and is pruned or mowed to collect the flowers and peduncles, never the woody parts.<\/p>\n
It is then washed and air-dried in low-light places and stored in cool, dry, low-light places until ready for use.<\/p>\n
